{"id":679,"date":"2015-02-15T14:06:03","date_gmt":"2015-02-15T21:06:03","guid":{"rendered":"http:\/\/yogapantsdiary.com\/?p=679"},"modified":"2015-03-29T17:32:02","modified_gmt":"2015-03-29T23:32:02","slug":"nacho-sunday","status":"publish","type":"post","link":"https:\/\/yogapantsdiary.com\/?p=679","title":{"rendered":"Nacho Sunday?!?"},"content":{"rendered":"<p>I was greatly looking forward to a workout at Red Rocks today, but alas the Denver weather is as surprising as usual.\u00a0 Even though I&#8217;ll take it over Chicago any day, the weather is always changing here.\u00a0 So instead of puking on stairs today, I&#8217;m hanging around the house.\u00a0 This is a rarity for me on the weekends; even more so is the fact that I&#8217;m cooking lunch.<\/p>\n<p>I usually cook during the week but not very often on the weekends.\u00a0 We are usually so busy that we eat out pretty often on the weekends.\u00a0 So today I thought I&#8217;d try my skills at sharing a recipe.\u00a0 I look up recipes on <a href=\"https:\/\/www.pinterest.com\/\">pinterest<\/a> all the time but rarely follow them.\u00a0 I&#8217;m constantly adding and subtracting from recipes.\u00a0 One of my favorite restaurants up the street, <a href=\"http:\/\/www.mountainsunpub.com\/locations.php\">The Vine Street Pub,<\/a> (also known as &#8220;the hippie place&#8221; to neighborhood folk) makes some killer chicken nachos. **Warning: Should you ever eat there, they only take cash!\u00a0 I always find myself thinking, &#8220;I could make this.&#8221; So I did.\u00a0 I now make this every other week or so.\u00a0 I love this meal.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/1920158_10202852428105532_1825178400_n.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-683\" src=\"https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/1920158_10202852428105532_1825178400_n-273x300.jpg?resize=273%2C300\" alt=\"1920158_10202852428105532_1825178400_n\" width=\"273\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/1920158_10202852428105532_1825178400_n.jpg?resize=273%2C300&amp;ssl=1 273w, https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/1920158_10202852428105532_1825178400_n.jpg?resize=137%2C150&amp;ssl=1 137w, https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/1920158_10202852428105532_1825178400_n.jpg?w=538&amp;ssl=1 538w\" sizes=\"auto, (max-width: 273px) 100vw, 273px\" \/><\/a><\/p>\n<p>As a kid, I would ask my mom to make tacos all the time.\u00a0 Every Friday in high school they served tacos. I love tacos. Tacos and nachos were a big reason why I weighed what I did. Tacos is a meal that I knew I had to figure out how to make healthier when I changed my lifestyle.\u00a0 I couldn&#8217;t go without tacos\/nachos for the rest of my life.\u00a0 So here&#8217;s my recipe.\u00a0 Give it a try!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><strong><span style=\"color: #ff0000;\">Chicken Nachos<\/span><\/strong><\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">1 lb. Ground Chicken <\/span><\/li>\n<li>1 can black beans (low sodium, organic)<\/li>\n<li>1 can of corn (low sodium, organic)<\/li>\n<li>1\/4 cup Taco Seasoning (I make my own &#8211; <a href=\"http:\/\/www.rachelcooks.com\/2011\/10\/28\/homemade-taco-seasoning\/\">Recipe<\/a>)<\/li>\n<li>1\/4 cup Frank&#8217;s Redhot Sauce Original<\/li>\n<li>3\/4 cup water<\/li>\n<li>Salsa (Love: Trader Joes Chunky)<\/li>\n<li>Cheese (Love: Trader Joes Cheddar)<\/li>\n<li>Tortilla Chips of Choice<\/li>\n<li>Optional: Chiles, Tomatoes, Jalepenos, other veggies<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Steps <\/strong><\/span><\/p>\n<ul>\n<li>Brown Chicken until cooked through.\u00a0 Drain if necessary.<\/li>\n<li>Add rinsed black beans, taco seasoning, Franks, and water.<\/li>\n<\/ul>\n<p><a href=\"https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/IMG_1188.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-680 size-large\" src=\"https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/IMG_1188-e1424032552295-1024x768.jpg?resize=525%2C394\" alt=\"IMG_1188\" width=\"525\" height=\"394\" srcset=\"https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/IMG_1188-e1424032552295.jpg?resize=1024%2C768&amp;ssl=1 1024w, https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/IMG_1188-e1424032552295.jpg?resize=300%2C225&amp;ssl=1 300w, https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/IMG_1188-e1424032552295.jpg?resize=150%2C113&amp;ssl=1 150w, https:\/\/i0.wp.com\/yogapantsdiary.com\/wp-content\/uploads\/2015\/02\/IMG_1188-e1424032552295.jpg?w=1575&amp;ssl=1 1575w\" sizes=\"auto, (max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><\/a><\/p>\n<ul>\n<li>Mix all together and bring to a simmer.\u00a0 Cook all the water out at med-high heat until the meat is nice and thick. Because all of it&#8217;s ingredients ARE vegetables.\u00a0 And since it&#8217;s from TJ&#8217;s: always no preservatives. Salsa is also low calorie! (5 calories a serving)<\/li>\n<li>Cheese: I hate low-fat cheese.\u00a0 Hate it.\u00a0 I buy regular cheese for two reasons: Low fat sucks and I don&#8217;t drink cow milk.\u00a0 Since we drink soy milk, this is my only opportunity for dairy fats.\u00a0 Also, since I&#8217;m at goal weight, this is something I have added back into my diet.<\/li>\n<li>Chips: The chips pictured are not my norm.
